Omakase is a very special, very strict format of Japanese dining which comprises a spontaneous tasting menu that is left to the chef’s discretion. Usually, these multi-course meals are served in the pristine surrounds of a sushi bar or dining room—but for the first time ever, a sushi master is bringing the concept to Wonder Kitchen. We spoke to Chef Randy of Bangkok’s Fillets about taking seafood to The Fields, and the unique challenges Wonder Kitchen will present.
