From locally sourced ingredients to cooking methods, service style and waste management, the concept looks to minimize negative societal and environmental impacts. Italy’s capital city is currently facing a drought. With his heart still in Rome, Chef Paolo Vitaletti runs a Roman trattoria called Appia in Bangkok and wanted to borrow a local tradition from his new home in Thailand to bring rain to his beloved homeland. So he wrote a letter to his friend Eve in Isaan and asked her to call the rain gods. She launched a rocket, a Bung Fai custom, and rain arrived in Rome.
They celebrated the wet day in Italy with food, drinks and dancing in the mud—and this cross-cultural experience is the spirit upon which this Wonder Feast is built.
