Rooted in sustainability, the circular food system, culinary heritage and health, chefs Paolo Vitaletti from Appia and Duangporn “Bo" Songvisavaand Dylan Jones from Bo.lan alongside Northern Thai tastemaker Andy Ricker from Pok Pokare bringing their Food Trust concept from Chiang Mai to The Fields.

From locally sourced ingredients to cooking methods, service style and waste management, the concept looks to minimize negative societal and environmental impacts. But the real spirit of this feast lies when looking beyond the plate: every dish will be presented by minority farmers who will bring the culinary traditions of their tribes to the table at Wonderfruit.

Italy’s capital city is currently facing a drought. With his heart still in Rome, Chef Paolo Vitaletti runs a Roman trattoria called Appia in Bangkok and wanted to borrow a local tradition from his new home in Thailand to bring rain to his beloved homeland. So he wrote a letter to his friend Eve in Isaan and asked her to call the rain gods. She launched a rocket, a Bung Fai custom, and rain arrived in Rome.

They celebrated the wet day in Italy with food, drinks and dancing in the mud—and this cross-cultural experience is the spirit upon which this Wonder Feast is built. Brace your palate for an adventurous culture clash of Isaan cooking and Italian cuisine by Chef Paolo of Appia and Nutthida Palasak of Zao Isaan, where intriguing new combinations and unexpected pairings make up a magnificent new menu designed only for The Fields.

The idea behind Aromkwan is the process of smoking that requires a high level of emotion and understanding of fire—so it should come as no surprise everything in this meal is smoked, even the cocktails. The food is served on a banana leaf, and there are no fancy dishes, not even cutlery at times.
